For the raita:

  • 1 cup full fat yogurt (you can use greek yogurt for added tanginess)

  • 2 tablespoons cilantro, chopped
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 1 green chilli, sliced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Tandoori Chicken Tacos with Spicy Cilantro Raita c/o Luvo

  1. Start by mixing all the raita ingredients together in a bowl. Once mixed, place them in a bowl in the fridge and let the flavour develop for about 1 hour.
  2. Prepare your Luvo meals according to package instructions, set aside.
  3. Heat up your tortillas. A dry pan is the way to go, but a quick nuke also works.
  4. Prepare the tacos by scooping some of Luvo’s rice, then the chicken and veggies, and top with spicy cilantro raita. Serves 4

Pro Tip: If you’re entertaining you can place all the ingredients separately so people can make their own.

Sprouted Tandoori Chicken Bowl with Creamy Tahini Dressing

For the bowl:

  • 1 Luvo Tandoori-Inspired Spiced Chicken entrée
  • ½ cup kale, washed and finely chopped
  • 1 cup assorted sprouts (you can find them in the herb section of your grocery store)
  • 1 tablespoon pumpkin seeds, roated* (see note below)

For the dressing:

  • 2 tablespoons tahini
  • 1 tablespoon olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon apple cider vinegar
  • Pinch of ground cayenne
  • ¼ teaspoon ground paprika

Notes: To roast the pumpkin seeds, place them on a parchment paper on a baking sheet and bake at 350F for 15 minutes, shaking the pan half way through to keep them from burning. When cooled, store in an airtight container and use as needed. You can add any ground spices you want to flavour them.

  1. Mix all the dressing ingredients in a bowl until smooth. If needed you can add extra olive oil to adjust consistency.
  2. Heat up Luvo meal according to package instructions, set aside.
  3. Place washed kale, sprouts, hot Luvo meal, and pumpkin seeds in a bowl. Top with a generous amount of creamy tahini dressing. Serves 1

Pro Tip: Need lunch tomorrow? Keep the greens separate so they don’t get soggy.

  • 2 Luvo Tandoori-Inspired Spiced Chicken entrées
  • 2 handfuls cremini mushrooms, cut in half
  • 1 red pepper, chopped in chunks
  • 1 zucchini, sliced (thick)
  • Skewers

To brush/marinate the veggies:

  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon ground ginger
  • salt and pepper to taste

  1. Place the pepper, zucchini, and mushrooms in a bowl with all the marinade ingredients and toss until spices and oil coat the veggies.
  2. Heat up a pan (high heat) and toss all the marinated vegetables in pan – let them brown so do not shake or move the pan. Make sure it’s not overcrowded as well (if needed, do 2 batches). Once browned, toss once, and let brown again. Full process should take 5-6 minutes. Set aside.
  3. Preheat oven at 350F. Heat up Luvo meal according to package instructions, set aside.
  4. Thread vegetables and chicken alternating in between. Place skewers in a tray and quickly heat in the oven for 5 minutes.

Pro Tip: Did you make too much? Save them for tomorrow but be sure to brush with marinade to rehydrate.
