Traditional Tacos, Untraditional Fillings

Does your Taco Tuesday checklist look something like this?

“Tortillas? Check. Ground meat? Check. Lettuce and tomato? Check.”

If the same ‘ole taco routine has gotten a bit stale, consider that tacos can be so much more than the usual tortilla, ground meat and predictable veggie toppings. They can be a vessel for some serious deliciousness while packing quality nutrition. Think of the possibilities! Almost any nourishing food fits in a taco! So, why not mix things up when making your next taco meal by challenging your palate with some new flavor combinations. Intrigued? We thought so!

Bust out of your taco rut by trying some of these ideas:

TACO TIP: Use corn (a great gluten-free option), whole wheat or sprouted grain tortillas as your base and keep them small, a 6-inch tortilla is a good size. Or substitute romaine or other large-leaf lettuce for the tortillas, where appropriate.

The Greek Taco

Fill a whole wheat tortilla with cooked chicken, kalamata olives, sliced cucumbers, crumbled feta cheese, a dollop of Greek yogurt, some Greek Salad Dressing and chopped tomatoes. (Greek Salad Dressing Recipe curtesy of Jodie Shield, RDN of Healthy Eating for Families.)

The 3 Corn Taco

Fill warmed corn tortillas with sautéed white hominy, fresh corn, shredded romaine lettuce, chopped cilantro and lettuce, and a dash of sriracha or this awesome Habanero BBQ Sauce (Habanero BBQ Sauce recipe curtesy of Elizabeth Shaw RDN of Shaw Simple Swaps.)

The Turkey Meatball Sub Taco

The Spicy Chicken Parmesan Taco

The Caesar Salad Taco

The Tofu Stir Fry Taco

The Soy Salmon Taco

Fill tortillas with Pan-seared Salmon then top with a honey-soy dressing, toasted sesame seeds, micro greens and bean sprouts. Place them on a warm tortilla and top with toasted walnuts, golden raisins, and a little bit of whipped cream.
