I probably don’t need to tell you this, but tomorrow is National Spinach Day. I bet you’ve got it marked in your calendar. It’s the one day each year where we can talk about our love of spinach without worrying about being shushed. In my opinion, one day is not enough. We should be celebrating spinach for an entire month, or decade. There is so much to like about spinach, I don’t even know where to start. So I made this list.
It’s packed with vitamins and minerals
As the U.S. Academy of Nutrition and Dietics notes, spinach is loaded with nutrients. It’s a great source of folate, vitamin A, iron and vitamin K, and also offers fiber, magnesium, calcium and a bit of protein. And spinach provides all that goodness without a lot of calories, making it a great food for those looking to keep their daily calorie intake in check. In fact, a study out of William Patterson University ranked spinach fifth among fruits and vegetables based on nutrient density.
You can prepare it any number of ways
It freezes well
You can store spinach in the fridge for a few days, but it also does well frozen. In fact, freezing may do a good job of preserving the vitamins, provided it has been flash frozen right after being harvested at peak ripeness. Many fresh vegetables sit on store shelves for a while and travel for days before arriving—they lose significant amounts of nutrients in the process. The bottom line? Eat it as fresh and recently picked as possible, and look at ways of incorporating frozen spinach into recipes too. Check out this video for understand the fresh-frozen dynamic.
It’s great for any meal
Spinach is not just a lunch and dinner item, you can easily have it for breakfast too. It’s a great way to get a healthy start to the day.
